I love the creaminess the avocado gives this salsa, it reminds me of guacamole, which I have yet to try to make but it's definitely on the list! All you need are a few ingredients before you're in verdé heaven with this super easy 'cu-vocado' salsa
Cucumber-Avocado salsa
1/3 cucumber, chopped
1/2-1 avocado, chopped
Juice of 1 lime
1/4 cup chopped onion
Cilantro
1-2 T Salsa seasoning (I got mine from walmart)
Chop up your cucumber and onion
Add the cilantro and squeeze the lime juice over it
Pour some salsa seasoning, I'd say start with about a tablespoon and add more if you need to
Mix all that up and taste it to see if you need more seasoning, then gently fold your avocado in
Depending on the ripeness of your avocado, the chunks may keep their shape but mine almost always ends up getting completely mashed up, which I don't mind because it's still delicious!
