Seafood is hands down my favorite meat to cook (and eat!) because it takes no time and I'm a bayou baby, that's what we do! So one day when I was browsing Pinterest I came across this recipe for Parmesan Crusted Chicken but I was in a fishy mood so I decided to try it some tilapia I had in the freezer.

This recipe was pretty straightforward so it only took about 15 minutes from prep to plate! So to get started dump all your dry ingredients on a plate and mix it up

Crack your egg into a bowl and whip that up

This was my first time trying the dry-wet-dry method in the oven, it's heaven on fried goodies like wings! But it turned out awesome, so first place the filets in the breadcrumb mixture and coat it

*admittedly this filet was dunked in egg first by accident lol, I was getting ahead of myself!*

Then dip them in the egg wash and get it nice and eggy! Oh and don't be like me, use a fork or tongs if you have them lol I'm always making a mess

Finally dip them back into the breadcrumb mixture and make sure everything's coated

Then place the filets in a lightly greased or lined baking dish or cookie sheet. I used a cookie sheet and a little grill plate so that they'd brown all over evenly

Drizzle a little olive oil on them and pop them in the oven for about 10-15 minutes, depending on the thickness.

They're done when they flake easily, are white on the inside and golden brown!

Parmesan Crusted Tilapia
serves 2

4 tilapia filets
1 1/2 C breadcrumbs
1/2 C Parmesan cheese
1 egg
1-2 T olive oil
Seasoning to taste (I used Tonys and garlic powder)

Directions

1. Preheat oven to 425. Line or grease a cookie sheet or baking dish for the fish

2. Combine breadcrumbs, cheese and seasonings on a plate and mix thoroughly. Crack egg into a bowl and whip until combined.

3. One at a time place each filet into the breadcrumb mixture first, egg wash then back into the breadcrumb mixture.

4. Place filets on baking dish and drizzle with olive oil.

5. Bake fish in the oven for 10-15 minutes or until golden brown and white on the inside.
I came up with this recipe a while ago after hours of reading other people's recipes for oven baked French fries. I try my best to eat pretty healthy so I'm always looking for alternatives to my favorite fatty foods lol!

So after my eyes starting burning from staring at my phone screen I got up and headed to the kitchen. I wasn't equipped with a full recipe just what I saw most recipes had in common: thinly cut fries, an egg wash, a coating. Everything else just kinda happened, so here's what you need

Crispy Oven Fries
makes 2 servings

1 large potato (Idaho and russet are best)
1 egg
~1/2 C bread crumbs
Seasoning
Oil

Directions

Preheat your oven to 400. Wash your potato and cut into slices lengthwise then into ~1/4 in fries. I have a natural cut slicer to do this for me, it's so awesome and was only $5 from Big Lots

Crack the egg into a bowl and whip. Pour the bread crumbs and seasoning into a separte bowl or plate and mix.

Dip fries into egg wash and let excess run off then coat with breadcrumbs

Lay fries on a cookie sheet making sure to not overcrowd them

When all fries have been breaded, drizzle a little oil over them to help them crisp up

Bake for 10 minutes or until bottom of fries have browned, then flip and bake another 10 minutes until nicely browned

When you remove the fries place them on a paper towel to absorb any excess oil and enjoy!

Stuffed potatoes is alwaysssss in heavy rotation in my kitchen because I usually always have the ingredients on hand and it's a snap to make! It's also super versatile!

When I first started making these, I made them with shrimp, like I was taught by my mom but one time I didn't have shrimp, so I used chicken and haven't looked back since but you could also try broccoli or black beans for a meatless meal! The cheese used is also interchangeable I sometimes use mozzarella, cheddar or a three cheese blend and even Parmesan, it really just depends on what I have in the fridge. I don't usually serve sides with these, just two potato halves or three if I'm hungry but you definitely can add some veggies like broccoli (my fav) or a salad. Oh and did I mention it's low-calorie? AND you can control your caloric intake by omitting or using less of certain ingredients like butter and cheese. Win win!

So first, bake your potatoes, the old fashioned way in the oven OR poke some holes in them and throw them in the microwave for 5-10 minutes depending on their size. I always start with 5 minutes then do 3 minute increments until they're done.

While your potatoes are cooking, go ahead and get your meat cooked

Once your potatoes have cooked and cooled, cut them in half and start scooping the inside out, but make sure to leave a layer on the inside of the peel or it'll be too weak to hold your stuffing.

Dump all your potato filling in a bowl and mix in your cheese, butter, milk (or sour cream, which I like better) and seasoning

Then fold your chicken into the stuffing mixture

Scoop the stuffing into your potatoes, sprinkle a little cheese on top and throw them in the oven for about 10 minutes or until the cheese melts and enjoy!

For 2 servings of two halves each I used

1 boneless skinless chicken breast (cut into chunks)
2 potatoes (Idaho and russets are best for baked potatoes)
Cooking oil
~2-3 T butter
1/4 C sour cream (or milk)
~1/3 C cheese plus some extra for topping
Salt and pepper or Tonys

1. Preheat your oven to 450. Wash and prick your potatoes then microwave them  until done (5-10 minutes)

2. Heat a skillet over medium heat, add cooking oil and when hot add chicken and cook until done.

3. When potatoes have cooled, cut in half lengthwise and scoop out potato filling, leaving a thin layer on the inside

4. Combine potato filling, butter, sour cream, cheese and chicken in a bowl and mix until butter is melted

5. Scoop stuffing into potato peels and top with cheese

6. Bake 10 minutes, uncovered or until cheese is melted and enjoy!

Hope you try it and love it! Aren't fast and easy recipes the best? =)
