I don't eat pork that often but every now and then I start craving bacon and after the first bite, a pork-eating streak begins. I usually go for pork steaks and pork chops to satisfy my hunger and once they're out of the freezer I don't buy them again for a while....until the hunger returns!
I was originally looking for a chicken recipe but couldn't find anything I liked so I decided to google a possible sauce for just plain pan-fried chicken. I wanted a sweet and sour sauce so after a few pages I stumbled upon a balsamic lime vinaigrette that was served on pork chops and I remembered I had quite a few in the freezer so why not? Pork chops it was!
So first I seasoned the pork chops and threw them in the oven under the broiler on a low rack for a few minutes then flipped them and let it cook through
While my chops were cooking I started on my sauce by heating up some oil in a skillet, adding the garlic and letting it cook a bit
Then I dumped everything else in the skillet, minus the corn starch and water, which I mixed together first before adding to the sauce
I let that boil a few minutes and thicken up like so
once it's glaze-y, drizzle (or smother =) ) pork chops with it! I served steamed broccoli and brown rice with this but you could also do mashed potatoes or baked beans and corn.
This was the perfect dish to feed my inner pork lover but you know I'm going to try it on some chicken, probably fish too!
Sweet Citrus Pork Chops
Serves 2
2 pork chops
juice of 1 lime
3 T balsamic vinegar
1 T brown sugar
2 t minced garlic
1 t oregano
1 t corn starch or flour
1-2 t water
Oil
Seasoning
Directions
1. Set oven to broil and lower the rack close to the bottom.
2. Season pork chops with salt and pepper or whatever seasoning you like, I always go for Tonys
3. Place pork chops on a cookie sheet or baking dish and cook for about 3-5 minutes until pork turns white, then flip over and cook an additional 3-5 minutes or until cooked throughout
4. Heat oil in a skillet and add garlic, cook for about a minute but don't let it brown too much
5. Add the vinegar, lime juice, oregano and brown sugar to the skillet. In a small bowl stir together cornstarch and water then add to skillet and bring to a boil
7. Once sauce reaches desired thickness pour over pork chops and enjoy!
