Lettuce wraps!

After making these two times, I have officially added them to my "super quick meals" list. I've also noticed I've been on an Asian kick for a while, probably because I have a huge chunk of ginger in the freezer as well as a love for all things sweet and sour. But I do like to make meals with things I have on hand so Asian inspired meals it will be until I'm tired of it, which I don't see happening lol I never tire of good food!


These wraps are sooooooooo good and I'm sure you can guess ultra low calorie, what's not to love? Plus you can add different toppings to spruce it up, I added pecans this time, but after my fail to toast them like so 


I decided to just sprinkle them on top instead....but I've also added cucumber salad (cucumbers, red onions, vinegar, salt and pepper) on top which is phenomenal!!! But you can keep it simple with just the mandarins, but you can also swap them out for pineapples. Don't you just love recipes that can be easily changed up? So let's get cooking...


Above is everything I used to make 4 wraps

4 romaine lettuce leaves
1/2 lb ground beef
1/4 C mandarin oranges and juice
2 T soy sauce
1 T brown sugar
1 t minced garlic
1 green onion
Ginger (optional)

First, brown your beef and drain off the fat


Then throw the rest of your ingredients in 


Cook until most of the liquid evaporates. At this point I like to add a little cornstarch or flour so that the juice kinda turns into a light glaze, but that's optional.

Next just scoop your beef onto your leaves, add any toppings you like and eat!


I know this recipe something that can add a little diversity to anyone's menu, and it's as easy as 1-2-3, literally! Hope you enjoy!!!
